Flavor profile

Kiwi's flavor profile is distinctly its own — bright, slightly tropical, with high acidity (citric and malic acids) and a sweetness that develops with full ripeness. The flesh is bright green to golden (in gold kiwi), surrounding a pale center of concentrated tartness and tiny edible black seeds. Actinidin in fresh kiwi actively digests protein — making sliced kiwi placed on beef a functional tenderizer (30 minutes is enough for surface tenderizing; longer breaks down proteins excessively). The same enzyme prevents kiwi from being used with gelatin (agar-agar is unaffected and works normally). Cooking destroys actinidin, so cooked kiwi works in gelatin desserts. Gold kiwi (A. chinensis, a different species) is sweeter, less acidic, and more tropical in flavor than green kiwi. For peak flavor, ripen at room temperature until yielding to gentle pressure — underripe kiwi is very tart and astringent. Best eaten raw; the flavor degrades significantly with cooking.
